Lemony Cucumber Couscous Salad

For dinner I was looking for something new to serve as a side. We had a cucumber lying around and some lemons, so I just googled “sides with lemon and cucumber” and this awesome recipe popped up: Lemony Cucumber Couscous Salad! I didn’t have Israeli Couscous, so I just used regular couscous and it turned out great.

Ingredients:

  • 1 cup Couscous, cooked
  • 1 Cucumber, diced
  • 1 Lemon, juiced
  • 1 Tbsp Olive Oil
  • ⅛ tsp Garlic Powder
  • ⅛ tsp salt
  • Fresh Cracked Pepper
  • 3 oz Feta Cheese, crumbled

Directions:

  1. Combine all items in a large bowl.
  2. Serve immediately for a warm salad or chill for a cold salad.

This salad was pretty good. I’m not the biggest cucumber fan, but I still really liked this salad and plan on making this again.
